Why not? I've never eaten Asian carp but have eaten native ones when I was a kid. We were poor and they were plentiful. Mom fixed them 2 ways. She pressure cooked them and if you got a bone, it was soft and not a hazard. She could fry them and they were right tasty, but you had to eat it carefully because of the bones. Truthfully, they are cleaner, have a better diet and a milder flavor than a lot of popular game fish. Black folks around here prefer them over catfish and bass any day. They go fishing strictly to catch carp. (They're also a lot of fun to catch.)

I am going to fish for them in the near future & if I get any I will to air fry them.

Talking We were "commercial" professional carp fishermen...

Caught one about 5 lb, in the local reservoir, kept it alive, home & in the kiddie pool all night to "clean itself out." Gutted & handed over to Tessie, neighbor & best Italian cook ever for our dinner prep.
It looked gross to us folks with no class laying there with the big eyes looking at us but we all dug into the Carp (AKA now, Copi.)
I don't think anyone ate more than 2 forkfuls. Even the best cook we knew couldn't make it edible to us.
We carp fished a lot, like rman said they were fun to catch. Dad's cornmeal worked best. We bought all the 2-6 lb ones home, let them bathe in the pool all night. I would load them in my Radio Flyer the next morning & take them to "The Jew" who owned the corner "Jew Deli" & trade them for food items. It was cool seeing the fish we caught swimming in his aquariums until sold. That was in the 50' & 60's, I'm sure that couldn't be done today, just calling Mr. Witt "The Jew" could cause an uproar.
Sure miss those days, not the "Copi dinner!"
